Easy breads are breads that are suitable for beginners, people who need a bread in a hurry or, even, children. They typically don’t require much in the way of advanced technique, such as preferments, complicated handling or shaping or extended fermentation.
But you shouldn’t think of these are inferior breads. In all cases, these are wonderful breads in their ways, from pitas for summer picnics to Lady R’s bread for whole wheat sandwiches to English muffins for breakfast.
I keep these on file for those times when I need a bread in a hurry (relatively speaking, of course) whether it’s for our own use or to give to a friend. Give these a try, you’ll be pleased with the results.
